1. Preheat the oven (175°C top/bottom heat)
2. Mix 100 g butter, the pulp of a vanilla pod and 100 g erythritol, add 4 eggs bit by bit.
3. Add 60 g almond flour, 100 g baking mix and 2 tsp. baking powder to the butter-egg mixture and stir in 50 ml milk.
4. Fill the dough into muffin cups. Press 3-5 blueberries into the dough of each muffin cup.
5. Bake the muffins for 25-30 minutes and let them cool down. Good Lizzappetite!

I made the blueberry muffins. Normally these products are an "unhappy" substitute (meaning I would rather be eating the high carb version). I found these muffins to be better than what I would normally eat for breakfast. They're higher in calories than what I normally eat, so if there were a way to bring the calorie content down, that would be the only way I'd love to see them evolve.

... but it is neccessary too much externals ingredient to make the muffin (like 100 gr of butter, 4 eggs, 60 gr of almond flour, baking powder and 50 ml of milk). The preparation for the old baking mix that it is not available anymore was easier. Pity. ps: it's good anyway :-D

schmeckt gut, ich mache meistens noch Flohsamen oder Mandelmehl oder Kokosmehl ran. Dann mit Kokosöl oder Butter, etwas Zimt oder Apfelmus damit das nicht so trocken ist. Einfach etwas rum experimentieren.

this is amazing and very easy to bake some wonderful muffins .have tried plenty of different fruits in them and everytime come out perfect.
I would however like to know if I can add good quality cocoa to make them choc muffins and if so how much cocoa and would I need to add an extra egg or milk to keep the moist texture of the muffins ?
Thanks for your feedback. Of course you can add some cocoa :-) Maybe the dough gets a little more dry but you can add a little bit of water or milk, the quantity by feeling.
