Up to one third of conventional flour can be replaced with coconut flour in recipes. This also makes pancakes or muffins nice and airy. But be careful: coconut flour has a high swelling capacity. This pays off when binding soups or sauces, or even when baking cakes. However, a more liquid consistency may have to be taken into account. To increase your daily fiber intake, coconut flour can simply be stirred into muesli, yogurt or drinks.
