Zucchini Pasta Boats
- Ingredients for 2 portions
- 100 g Lizza Low Carb Pasta
- 1 large zucchini
- 100 g cherry tomatoes
- 1 glass of Lizza Tomato Sauce
- fresh oregano
- 1 small chilli pepper
- 2 tbsp olive oil
- Salt & freshly ground pepper
- pinch of freshly ground black pepper
Preparation:
- Prep the Lizza Pasta as described on the box. Cool down with cold water when they are finished.
- Wash the zucchini, cut in half and use a spoon to scrape out the soft insides.
- Slice the chilli pepper in half and remove the core. Cut into small pieces.
- Wash tomatoes and cut in half.
- Mix the pasta with the tomato sauce and use it to fill the zucchini halves. Sprinkle the chillies and tomatoes on top.
- Pour olive oil over the zucchinis and season with salt and pepper. Bake in a preheated oven (180°C top & bottom heat) for 15 minutes.
- Sprinkle with fresh oregano before serving and enjoy.
