Vegan "Egg" Toasties
- Ingredients for 2 portions
- 4 Lizza Toasties
- 150 g tofu
- 70 ml unsweetened almond milk
- 1 tsp turmeric
- 20 g organic pumpkin puree
- salt and pepper
- chopped parsley
- a splash of oil
- pinch of freshly ground black pepper
Preparation:
- Use a knife or cookie cutter to cut a hole in the centre of each toastie and set the toasties and the cut pieces aside.
- Cut the tofu into small pieces and put in a blender.
- Add almond milk, turmeric, and salt and pepper to taste.
- Blend everything until it's smooth and creamy.
- Brush a large frying pan with oil, heat it to medium heat and place 2 toasties in the pan. Fill the holes with the tofu mixture.
- Cook the toasties for 4 minutes. Gently turn them over and cook them again for 1-2 minutes.
- Repeat for the rest of the toasties.
- Place the "egg" toasties on a plate and decorate with a few spoonfuls of pumpkin puree.
- Season to taste with salt and pepper and decorate with parsley.
