Vegan "Egg" Toast Square

  • Ingredients for 2 portions
  • 4 Lizza Toast Squares
  • 150 g tofu
  • 70 ml unsweetened almond milk
  • 1 tsp turmeric
  • 20 g organic pumpkin puree
  • salt and pepper
  • chopped parsley
  • a splash of oil
  • pinch of freshly ground black pepper

To the Toast Squares


  1. Use a knife or cookie cutter to cut a hole in the centre of each Toast Square and set the Toast Squares and the cut pieces aside.
  2. Cut the tofu into small pieces and put in a blender.
  3. Add almond milk, turmeric, and salt and pepper to taste.
  4. Blend everything until it's smooth and creamy.
  5. Brush a large frying pan with oil, heat it to medium heat and place 2 toast squares in the pan. Fill the holes with the tofu mixture.
  6. Cook the Toast Square for 4 minutes. Gently turn them over and cook them again for 1-2 minutes.
  7. Repeat for the rest of the Toast Squares.
  8. Place the "egg" Toast Squares on a plate and decorate with a few spoonfuls of pumpkin puree.
  9. Season to taste with salt and pepper and decorate with parsley.
