Mexican Burger
- Ingredients for 2 portions
- 150g Lizza bun baking mix
- 180ml sparkling water
- 2 pickled cucumbers slices
- 2 handfuls of lettuce
- For guacamole:
- 1 avocado, mashed
- 1 tomato, diced
- 1 small onion, diced
- A handful of coriander leaves
- 1 tsp lime juice
- Salt to taste
- 1 tsp black pepper powder
- ½ tsp red chili powder
- For salsa:
- 2 tomatoes, diced
- 1 onion, diced + two thin onion rings
- 1 garlic clove, diced
- 1 tbsp pickled jalapeño
- 1 tsp lime juice
- A handful of coriander leaves
- Salt to taste
- 1 tsp black pepper powder
- ½ tsp red chili powder
- Sunflower mince patty:
- 76g Sunflower Mince
- 150ml water
- 2 tbsp vegan egg substitute
- 4 tbsp bread crumbs
- 1 onion, diced
- 1 small beetroot, grated
- 1 small potato, grated
- 3 tbsp sunflower oil
- 1 tsp salt and black pepper
- ½ tsp chili and turmeric
- 2 tbsp taco seasoning (see tip*)
Preparation time: 20 minutes
Cooking time: 1 hour 10 minutes
Instructions:
- Mix Lizza Low Carb Bun baking mixture with sparkling water and knead thoroughly. Form buns and let them rest for 15 minutes.
- Meanwhile, preheat the oven to 240° C top/bottom heat. Place the buns on a greaseproof paper on an oven rack and bake for 15 minutes. Then reduce the temperature to 210° C and continue baking for another 25 minutes.
- Let the buns cool down completely.
- In a bowl, add mashed avocado, lime juice, salt, red chiili powder and black pepper powder. Mix in diced onion, tomatoes and coriander leaves.
- Add tomatoes, onions, garlic and coriander leaves in a processor and process until a chunky salsa is made. Add diced pickled jalapeño, lime juice, salt, black pepper powder, red chilli powder and mix together.
- Wet the sunflower mince with water and wait a moment. Mix in all ingredients listed under sunflower mince patty and then taco seasoning carefully. Add water if necessary as the patty shouldn't get too dry.
- Fry the patties one after the other in a hot pan or griddle.
- Cut the Lizza burger bread open and place lettuce leaf and onion rings. Place the cooked sunflower patty on top.
- Spread guacamole and salsa on top and place a slice of pickled cucumber and place the lid on.
Tip*: To make the taco seasoning, mix ½ tsp of salt, garlic powder, chili powder, cumin powder, dried oregano and black pepper powder.
