Low Carb Toast with Grilled Vegetables

  • Ingredients for 2 portions
  • For the veggies:
  • 200 g zucchini
  • 100 g eggplant
  • 100 g red bell pepper
  • 15 ml olive oil
  • Salt and pepper, to taste
  • For the toast:
  • 2 Lizza Toast Squares
  • Your choice: Lizza Tomato Sauce, Pesto, or Spread

To the Toast Squares

Preparation: 15 minutes

Cooking time: 5 minutes


  1. Wash and cut the veggies into slices.
  2. Brush the veggies with olive oil and season to taste with salt and pepper.
  3. In a grill pan grill the veggies for 3 minutes per side (only 2 minutes for zucchini).
  4. Cut Toast Squares in half and apply your favourite spread.
  5. Arrange eggplant, peppers, and zucchinis on the bottom Toast Square half, close with the top half and serve.
