Lemon Poppy Seeds Clafoutis
- Ingredients for 2 clafoutis
- 4 tbsp Lizza Sweet Baking Mix
- 2 tbsp vegan butter or coconut oil, melted
- 30 g erythritol
- 80 ml unsweetened almond milk
- 60 ml full fat coconut milk
- 1 tsp xanthan gum
- ½ tsp baking powder
- ½ tsp vanilla extract
- 1 tbsp poppy seeds
- 2 tsp freshly grated lemon zest
- 60 g cherries, blackberries, or raspberries
Preparation:
- Preheat the oven to 180°C.
- In a bowl, combine butter with erythritol.
- Add Lizza Sweet Baking Mix and stir until combined.
- Fold in xanthan gum, almond milk, coconut milk, baking powder, vanilla, poppy seeds, and lemon zest.
- Grease 2 ramekins or small pie plates with butter.
- Divide the mixture between the plates and top with desired fruits.
- Bake covered with a piece of parchment paper for 20 minutes. Remove the paper and bake for another 5-7 minutes.
- Serve warm.
