Comfort Keto Pasta

 

  • Ingredients
  • 1x Lizza Pasta Rigatoni
  • 1x Lizza Organic Tomato Sauce
  • 1x Courgette, cut into smallish chunks
  • 1x Onion, diced
  • 3x Garlic cloves, minced
  • Large handful of spinach
  • 100g vegan cheese, grated
  • Salt and pepper to taste

    Serves 2
    1. Preheat oven to 180°C.
    2. Cook the rigatoni according to the instructions.
    3. Place a saucepan with a little oil over a medium heat.
    4. Fry the onions until soft before adding the garlic and cook for another minute.
    5. Add the courgette chunks and cook until softened.
    6. Add the spinach and mix in until the spinach has wilted.
    7. Pour in the tomato sauce, cook for another few minutes while stirring and season to taste.
    8. Drain the cooked pasta and then add the pasta to the sauce and vegetables and stir to coat.
    9. Pour the pasta, sauce, and vegetables into a large baking dish and top with the grated cheese.
    10. Place the baking dish in the oven and cook until the cheese has melted and is bubbling away nicely.
