Christmas Wreath


  • Ingredients for 8 portions
  • The dough:
  • 150 g Lizza Sweet Baking Mix
  • 1 tsp baking powder
  • 120 g vegan butter, cold
  • Salt to taste
  • 2-4 tbsp ice cold water
  • 1 tsp xanthan gum (optional, makes dough elastic)
  • Filling:
  • 250 g spinach, thawed
  • 30 ml olive oil (extra for brushing)
  • 250g soft tofu
  • 1 tbsp Lizza Apricot Spread
  • Zest from 2 lemons
  • Salt and pepper to taste
  • pinch of freshly ground black pepper




  1. Make the dough; slice vegan butter and place in a food processor.
  2. Add Lizza baking mix, baking powder, salt to taste, and xanthan gum (optional).
  3. Process until coarse crumbs form. 
  4. Add water and process until the dough comes together. 
  5. Roll out the dough between two pieces of baking paper and fold like a book. Place in a fridge for 30 minutes. Remove after 30 minutes, roll out again and repeat the rolling process. Repeat once more.
  6. Make the filling; drain the spinach. 
  7. In a food processor, combine the spinach, tofu, olive oil, apricot jam, and lemon zest. Process until almost smooth. Season to taste.
  8. Divide the dough into small balls. There are no rules here. You can make larger or smaller balls, as long as you have two rows of them in your baking dish. 
  9. It is ideal to use a baking dish with a removable bottom. Grease your baking dish. 
  10. Roll out each ball to a thin circle and place some filling in the center. Wrap the dough around the filling and roll afterwards to get a nicely shaped ball. Place the balls on the edges of the baking dish in two rows. 
  11. Take some aluminum foil and shape into a ball. Place that ball in the center of a wreath. This will prevent the dough from expanding too much and give a nice hole in the middle, so at the end you will have a wreath.
  12. Preheat the oven to 180C.
  13. Brush the balls with olive oil and bake for 35 minutes.
  14. Let it cool down before slicing and serving.
